Carol Bareuther is a U.S. Virgin Islands-based freelance writer, who brings more than 30-years of experience in specialty areas of nutrition, water sports and sports fishing, and destination travel. Bareuther’s food, cooking and nutrition articles have appeared as a weekly column in the Virgin Islands Daily News, from 1988-2001. From 1995-1999, she has been a syndicated columnist for Copley News Services and from 2000-2001, the Caribbean Cuisine guide for About.com. Nationally and Internationally, she is recognized in the American Institute for Cancer Research, Water sports and travel magazines, which include All At Sea, Caribbean Compass, Caribbean Travel and Life, Destinations, Discover the USVI, Yacht Essentials, Cruising World, Marlin, Sports Fishing, SAIL, Sailing World, Seahorse, and The Triton. She has also written the monthly “Caribbean Currents” column, as well as several destination features, for Southern Boating magazine since 1996. Bareuther is a member of Boating Writers International.

In the area of public relations, Bareuther provides all press coverage for annual events such as the Virgin Islands’ Game Fishing Club’s Dolphin, Wahoo and July Open Tournaments; the USVI Open/Atlantic Blue Marlin Tournament; the North side Sport Fishing Club’s Annual Bastille Day Kingfish Tournament; the St. Thomas Yacht Club’s International Optimist Regatta, Carlos Aguilar Match Race, the Choice Wireless VI Open Tennis Tournament and St. Thomas International Regatta; and English press releases for the San Juan International Regatta and San Juan International Billfish Tournament. She has also lent her media relations skills to promoting U.S. Coast Guard recruiting efforts in the Virgin Islands, drawing in part on her firsthand connection to the service through her daughter’s career.

Bareuther, a New Jersey native, holds a Bachelor of Science degree in Dietetics and graduated summa cum laude from Marshall University, Huntington, WV. She is a Registered Dietitian and member of the Academy of Nutrition & Dietetics who has worked as Pediatric/Obstetric Dietitian at the University of Kentucky Medical Center, Lexington, KY; Clinical Dietitian at the Hospital University of Pennsylvania, Philadelphia, PA; Clinical Dietitian at the Roy L. Schneider Community Hospital, St. Thomas, U.S. Virgin Islands.

On a personal note, Bareuther is the proud mother of daughter Nikole “Nikki” Barnes, a St. Thomas native who became the first active-duty U.S. Coast Guard officer to compete in the Olympic Games, representing Team USA in sailing’s Women’s 470 class at the 2020 Tokyo Olympics.
